Concealment is the whole job. A ghillie suit breaks up your outline in a way that flat printed camo cannot, because the material moves with the brush instead of sitting flat against it.

What you want depends on the season and how you hunt. Early-season turkey and warm-weather stalking call for an ultralight suit you can actually move in. Late-season deer work wants coverage and a color mix matched to bare timber. Bow hunters usually want a jacket and sleeves rather than a full suit, so the string stays clear.
